Favorite Chicken Potpie
When it comes to comfort food, few dishes can compare to a delicious and hearty chicken potpie. With its flaky crust and savory filling, this classic dish has been a favorite for generations. In this article, we will share with you a recipe for Favorite Chicken Potpie that will warm your heart and satisfy your taste buds.
Ingredients:
For the crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cut into small cubes
- 6-8 tablespoons ice water
For the filling:
- 2 tablespoons butter
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 3 cups cooked chicken, shredded or diced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C).
2. For the crust, in a large mixing bowl, combine the flour and salt. Add the cold butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
3. Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix. Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
4. For the filling, in a large skillet, melt the butter over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are tender, about 5-7 minutes.
5. Sprinkle the flour over the vegetables and stir well to coat. Cook for a minute to cook off the raw flour taste.
6. Gradually pour in the chicken broth and milk, stirring constantly until the mixture thickens. Add the cooked chicken, frozen peas, dried thyme, salt, and pepper. Stir well to combine.
7. Remove the skillet from heat and let the filling cool slightly.
8. Roll out one portion of the chilled dough on a lightly floured surface to fit the bottom of a 9-inch pie dish. Place the rolled-out dough in the pie dish and press it gently to fit. Trim any excess dough hanging over the edges.
9. Pour the chicken filling into the prepared pie dish.
10. Roll out the remaining portion of the chilled dough to fit the top of the pie. Place it over the filling and crimp the edges to seal. Cut a few slits on the top crust to allow steam to escape during baking.
11. Place the pie dish on a baking sheet to catch any drips. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
12. Remove from the oven and let it cool for a few minutes before serving.
