Chicken Potpie Casserole

If you're looking for a comforting and satisfying meal, look no further than chicken potpie casserole. This classic dish combines tender chicken, savory vegetables, and a creamy sauce, all topped with a flaky crust. Here's how to make chicken potpie casserole:

Ingredients:

- 2 cups cooked chicken, shredded or diced

- 1 cup frozen mixed vegetables (peas, carrots, green beans, corn)

- 1/2 cup chopped onion

- 1/2 cup chopped celery

- 1/2 cup chopped mushrooms

- 1/4 cup butter

- 1/4 cup all-purpose flour

- 1 1/2 cups chicken broth

- 1/2 cup milk

- 1 tsp salt

- 1/2 tsp black pepper

- 1/2 tsp dried thyme

- 1/2 tsp dried sage

- 1/2 tsp garlic powder

- 1/2 tsp onion powder

- 1/2 tsp paprika

- 1/2 tsp celery seed

- 1 refrigerated pie crust

Instructions:

1. Preheat your oven to 375 degrees F.

2. In a large skillet, melt the butter over medium heat.

3. Add the onion, celery, and mushrooms to the skillet and cook until the vegetables are tender, about 5-7 minutes.

4. Sprinkle the flour over the vegetables and stir until the mixture is well combined.

5. Gradually add the chicken broth and milk to the skillet, stirring constantly to prevent lumps from forming.

6. Add the salt, pepper, thyme, sage, garlic powder, onion powder, paprika, and celery seed to the skillet and stir to combine.

7. Bring the mixture to a simmer and cook for 2-3 minutes, or until the sauce has thickened.

8. Add the cooked chicken and frozen vegetables to the skillet and stir to combine.

9. Pour the chicken and vegetable mixture into a 9x13 inch baking dish.

10. Unroll the refrigerated pie crust and place it over the top of the casserole, trimming any excess dough.

11. Cut a few slits in the top of the crust to allow steam to escape.

12. Bake the casserole for 30-35 minutes, or until the crust is golden brown and the filling is hot and bubbly.
